Buzhenina is a traditional Russian and Ukrainian dish with a centuries-old history. Once upon a time there was a letter “v” at the beginning of its name. It is believed that the word “vuzhenina” is associated with the Old Slavonic “vudit”, which means “to dry”, “to smoke”. This is a whole baked piece of meat, which is made from pork, but boiled pork is also made from lamb and bear meat. Rub the meat with spices, salt, oil and bake in the oven.
