The Russian Tsar tried this dish for the first time, he liked it so much that carbonade began to be prepared constantly. According to one version, Mitrofan Carbonad prepared the meat delicacy for the Russian Tsar. For this reason, the Tsar ordered this dish to be named after the cook and awarded Mitrofan the highest post in the Tsar’s kitchen. Now this dish is appreciated by gourmets all over the world. In Belgium there is a dish called Carbonade in Flemish - it is made from pork tenderloin and stewed in beer sauce.
